This dip is delicious alongside most anything! This quick and easy recipe can be made in advance and stored in the fridge.
Yield: a few cups
Ingredients:
4 eggplants large
24 cloves garlic
3 jalapenos
½ c tahini (to taste)
3 TB mix of cumin and dark chili powder
Pam Spray or similar spray oil
Salt to taste
Method:
Put 6 slits for garlic clove sin each eggplant. Put in roasting pan, cover with spray oil (PAM) along with jalapenos. Roast at 400 F for 20-30 minutes until soft. Flip halfway through for even cooking. Mix all and mush into paste.
