Yield: 35 -40 burgers
Ingredients
8-10 large cloves garlic
2 ea yellow onion, minced
4 T mushroom powder, porcini (optional)
4 T jalapeno, minced
1 T cumin
1 T paprika
2 tsp coriander
10 lbs black beans, cooked
6 cups quinoa, cooked
¼ cup tamari
Instructions
Saute/sweat aromatics (first seven ingredients). Mix with beans and quinoa.
Place half of the mixture in a food processor and pulse for 30 seconds. Repeat for
second half of mixture. Remix together and check for salt (tamari). Form patties
and chill.
