Chana masala or chole masala is a popular vegetable dish in Indian cuisine. The main ingredient is chickpeas (chana) which are high in protein. It is fairly dry and spicy with a sour citrus note. The dish is found throughout South Asia and is particularly popular in northern India and Pakistan. Ingredients
Garbanzo, cooked 5 lb
Onion, chopped 2 ea
Ginger, chopped 2 tsp
Green Chilies, chopped 2 ea
Chili Powder 3 oz
Coriander Powder 2 oz
Chana Masala 3 oz
Garam Masala 3 oz
Tomato Paste 2 cup
Oil 4 oz
Cumin Seeds 2 oz
Chopped Cilantro ½ cup
Yogurt (optional) 1 cup
Method
Heat the oil, add the cumin seeds, fry for 20 seconds then add the onion and ginger. Cook for 10 minutes. Add the tomato paste and cook for another 5 minutes. Add all the spices including the green chili. Fry for 3 minutes and add the chickpeas. Check the salt and cook for another five minutes. Mix in the chopped cilantro. Garnish with lemon slices and finely chopped red onion. Serve with a side of rice or warm naan bread.
