Crepes

For 2-3 People

2 eggs

1 c milk

¾ c flour (AP)

dash salt

1 ½ Tbsp melted butter


For 4-5 people

3 eggs

1 ½ c milk

1 c flour

½ tsp salt

2 ½ Tbsp melted butter


Instructions:

  1. Mix ingredients with a whisk until fairly smooth. Batter should be thin.

  2. Ladle only enough into a hot Teflon frying pan to barely cover the bottom.

  3. To make “laces” use less batter or a bigger pan and swirl so edges run.

  4. Flip when edges start to tan.

  5. Top with whatever you like and roll with a fork.
