Ingredients:
8 cups black beans ( dried )
6 quarts water
6 large yellow onions ( diced )
1/4 cup ground cumin
1/2 cup white sugar
1/2 cup garlic cloves ( whole peeled )
1/2 bottle Cholula ( or other hot sauce )
salt / pepper to taste
Makes App. half a hotel pan
Technique:
Combine water, beans, and garlic coves, and simmer over medium heat, covered for 2 1/2 hrs, or until beans are fork tender. Pour off some of the bean water leaving app. 2 to 3 cups.
Separately saute diced onion over very low heat in 2 tbls oil until onions are caramelized. App. 30 mins.
When beans are ready add the caramelized onions, cumin, sugar, salt / pepper, and hot sauce. Blend using either an immersion blender, or a tabletop blender. Blend until smooth. Beans should be a thick pasty consistency.
