Makes 60 servings
Ingredients:
2 1/4 cups unsalted butter softened
2 1/4 cups packed brown sugar
2 1/4 cups pineapple juice
4 1/2 cups flour
2 Tbls baking powder
1 1/2 tsp salt
1 1/2 cups white sugar
9 eggs
1 1/2 tsp vanilla
3 fresh pineapples cored and sliced into rings
2- 14oz jars maraschino cherries halved or chopped
Instructions:
Preheat oven to 400
In a deep sheet tray mix 1 cup of the butter, 3/4 cups of the pineapple juice, and the 2 1/4 cups brown sugar, and melt it in the oven for a few mins.
Place the pineapple rings in the mixture in a decorative pattern
Sift together the dry ingredients
Cream the remaining 1 1/4 cups butter and the white sugar
Beat in the eggs one at a time until smooth
Add the remaining 1 1/2 cups pineapple juice to the mixture and the vanilla
Beat in the dry ingredients until smooth
Pour batter into the deep sheet tray and bake at 400 for 30 mins
Let cake cool for 10 mins before flipping it and garnish with cherries
