Spaghetti with Cherries, Chard, and Walnuts

Make sure to serve this yummy dish hot!


Ingredients

3 cups walnuts, chopped

1 cup olive oil

10 garlic cloves, minced

10 lbs. chard leaves, chopped

salt and pepper to taste

4 cups dried cherries

3 lbs. whole wheat spaghetti


Instructions

1. Bring a large pot of water to boil for cooking the pasta.

2. Toast the walnuts in a 350 degree F oven, for about 15 minutes, or until golden brown

3. Heat the oil in large pan, and add the garlic until it is golden, but be careful it does not burn. Add the chard, stir to coat the leaves with the oil and garlic, and season with salt and pepper. Cover and cook, stirring once or twice, until the chard has wilted, about 5 minutes. Stir in the cherries, toasted walnuts, and remove the pan from the heat, cover to keep warm.

4. Meanwhile, cook pasta in the salted water until al dente. Reserve some of the pasta water. Toss the pasta, chard, adding the cooking water as needed to moisten the pasta. Serve immediately.
