Yield: 30 Pieces
Ingredients:
10 Yellowed Plaintains cut in 2 inch sections with peel on
1 cup melted butter
3 TBLSP Lime Juice
2 bunches scallions
Instructions:
Boil unpeeled wheels until bamboo skewers the pieces easily
Sautee two bunches scallions, chopped with 6 cloves garlic, and salt and pepper.
Mash with 1 cup of melted butter and 3 TBSP lime juice.
Cool, form balls with small ice cream scooper.
Fry in 360 degree oil until caramelization begins, approx 4-5 minutes.
Drain, serve with a spicy or herbed sauce.
For the “Mofongo version, use the same recipe but use only green plaintains, not
yellowed.
