Yield: ~ 50 Sandwiches
Ingredients:
8, 12 ounce packages firm tofu, crumbled
2 cups tomato paste
4 cups water
1/3 cup dried oregano
2 cups ketchup
½ cup vinegar
2 tbsp. cayenne pepper
¾ cup soy sauce
½ cup olive oil
8 garlic cloves, minced
2 large onions, chopped
4 green bell peppers, chopped
Salt and pepper to taste
50 rolls, halved
Lettuce, shredded
Instructions:
In a medium-sized bowl, mix the tomato paste, water, oregano, ketchup, vinegar, cayenne, and ¼ cup of the soy sauce. Set aside.
In a large frying pan, sauté the garlic, onion and pepper in the oil until the onion is translucent.
Add the tofu and the rest of the soy sauce, and cook until the tofu browns.
Stir the sauce from the bowl into the vegetables and tofu. Bring the mixture to a boil, and add salt if desired.
Once the sauce is thick, spoon onto the rolls, and garnish with lettuce.
